serves 4
ingredients
3 garlic cloves, minced
2 tablespoons white wine vinegar
1 tablespoon light soy sauce
900g/2lb fresh squid, cleaned
and cut into rings
salt and freshly ground
black pepper
• Put the garlic, vinegar, soy sauce,
1 tablespoon water and salt and
pepper to taste in a frying pan
over a medium heat, and bring to
the boil.
• Add the squid while the mixture is
still boiling, and cook for another
3–4 minutes, stirring occasionally.
Serve immediately.
