ingredients
2 tablespoons olive oil
12 raw king prawns, peeled
and deveined
2 tablespoons dry sherry
a few drops of Tabasco sauce
salt and freshly ground
black pepper
crisp lettuce leaves such as Little
Gem, to serve
• Heat the oil in a heavy frying pan
over medium-high heat, and sauté
the prawns for 2–3 minutes until
pink in colour.
• Pour on the sherry and Tabasco,
and season with salt and pepper.
• Give the prawns a quick stir, and
serve immediately on a bed of
crisp lettuce leaves.
