ingredients
200g/7oz spaghetti
about 3 tablespoons olive oil
2 courgettes, finely sliced
50g/2oz Parmesan cheese,
freshly grated
salt and freshly ground
black pepper
• Bring a large pan of lightly salted
water to the boil, and cook the
spaghetti until al dente.
• Heat 1 tablespoon of the oil in a
large frying pan, and sauté the
courgettes in batches until golden,
adding more oil when necessary.
• Drain the spaghetti well, add
1⁄2 tablespoon of the oil and season
generously with salt and pepper.
• Toss the courgettes with the pasta,
then divide between two warmed
serving bowls. Sprinkle with the
Parmesan just before serving.
