ingredients
50g/2oz fresh thyme, chopped
75g/3oz fresh sage, chopped
50g/2oz fresh mint, chopped
50g/2oz fresh marjoram,
chopped
2 garlic cloves, finely chopped
125ml/4fl oz extra virgin
olive oil
500g/1lb 2oz tagliolini (also
known as taglierini)
100g/4oz Parmesan cheese,
freshly grated
2 tomatoes, cut into wedges
salt
• Put the thyme, sage, mint and
marjoram in a bowl with the garlic
and the oil. Leave for at least
1 hour, stirring occasionally.
• Bring a pan of lightly salted boiling
water to the boil, and cook the
pasta until al dente. Drain.
• Toss the pasta with the herb
dressing. Serve sprinkled with the
Parmesan and a little salt, and
topped with the tomatoes.
