Apricot jam
1 tin of mandarin segments
1–2 oz (25–50 g) chocolate (dark or milk)
1⁄2 tsp ginger (or use fresh)
Method
1. Spread the pizza base with apricot jam.
2. Drain the tin of mandarin segments and cover the surface of
the pizza with the fruit.
3. Sprinkle or grate the ginger evenly over the fruit according to
taste and roughly grate the chocolate on top.
4. Bake for about 20 minutes, Gas Mark 4 (180ºC).
