ingredients
8 medium courgettes
450g/1lb minced beef
1 egg
2 garlic cloves, crushed
1⁄2 teaspoon dried mixed herbs
4 tablespoons fresh breadcrumbs
2 tablespoons water
• Pre-heat the oven to 180°C/
350°F/Gas mark 4.
• Cut each of the courgettes in half
lengthways. Using a sharp knife or
teaspoon, scoop out the courgette
flesh to make shells, taking care
not to pierce the skin.
• Mix together all the remaining
ingredients in a bowl. Spoon the
mixture into the courgette halves
and rejoin each half to another to
form whole courgettes again.
• Put the filled courgettes in a lightly
oiled baking dish, and roast in the
oven for 30 minutes. Serve hot.
